  • 2 large Egg
  • 1 tsp Ginger
  • 3 tbsp Green onion
  • 1 tbsp Soy sauce
  • 1 tsp Cornstarch(optional)
  • 1 tbsp Cold water(optional)
  • 1 tsp Neutral oil(optional)
  • 0.75 cup Cooked rice
  • 0.25 tsp Black pepper(optional)

Instructions

  1. 1

In a pot, bring broth to a gentle simmer. Stir in ginger and soy sauce.

  2. 2

If using cornstarch, mix cornstarch with cold water and drizzle into simmering broth to lightly thicken.

  4. 4

Add green onion and black pepper. Cook 30–60 seconds more until egg is set.

  5. 5

Serve hot with the cooked rice on the side (or ladle soup over rice).
