Ingredients

  • 3 lbs whole chicken, cut into pieces
  • 6 cloves garlic, minced
  • 2 tbsp fresh ginger, grated
  • 3 tbsp coconut aminos
  • 2 tbsp avocado oil
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil(optional)
  • 1/2 tsp black pepper
  • 2 green onions, sliced(optional)

Instructions

  1. 1

Mince the garlic and grate the ginger. Whisk together garlic, ginger, coconut aminos, avocado oil, rice vinegar, sesame oil, and black pepper in a large bowl.

  2. 2

Pat chicken pieces dry and coat thoroughly with the marinade. Cover and marinate at room temperature for 20 minutes (or refrigerate up to overnight).

  3. 3

Preheat oven to 425°F (220°C). Arrange chicken skin-side up on a rack-lined baking sheet, reserving excess marinade.

  4. 4

Roast for 40-45 minutes, brushing once with reserved marinade halfway through, until skin is glossy and internal temperature reaches 165°F (74°C).

  5. 5

Rest chicken 5 minutes, then sprinkle with sliced green onions before serving.
