Ingredients

  • 200 g boneless skinless chicken breast
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 1 cup broccoli florets
  • 1 medium bell pepper
  • 1 medium carrots
  • 1.5 tbsp neutral oil (canola or vegetable)
  • 1.5 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp dark brown sugar
  • 0.33 cup chicken broth (low-sodium)
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 0.25 tsp salt(optional)
  • 0.125 tsp black pepper(optional)

Instructions

  1. 1

Prep (about 12 minutes): Slice chicken into thin strips. Mince garlic and grate ginger. Cut broccoli into small florets, slice bell pepper, and cut carrots into thin matchsticks.

  2. 2

Cook (about 15 minutes): In a small bowl, whisk cornstarch with water to make a slurry. In another bowl, mix rice vinegar, honey, brown sugar, and chicken broth.

  3. 3

Heat a large skillet or wok over high heat and add oil. Stir-fry chicken strips 4–5 minutes until mostly cooked through and lightly browned; remove to a plate.

  4. 4

Add broccoli, carrots, and bell pepper to the pan with a splash of water (1–2 tbsp) and stir-fry 4–5 minutes until crisp-tender.

  5. 5

Add garlic and ginger and stir-fry 30–60 seconds until fragrant.

  6. 6

Return chicken to the pan. Pour in the sauce mixture and stir until glossy and thickened, 2–3 minutes. Season with salt and black pepper to taste, then serve immediately.
