- 8 large Eggs
- 1 cup Spinach(optional)
- 6 cups Cauliflower rice
- 3 stalks Green onions (chopped)(optional)
- 2 cloves Garlic (minced)
- 2 tbsp Neutral oil(optional)
- 2 tbsp Soy sauce (low-sodium)
- 1 tbsp Rice vinegar(optional)
- 1 tsp Five-spice powder
- 1/4 tsp White pepper(optional)
- 1/4 tsp Salt(optional)

If using frozen cauliflower rice, thaw and squeeze dry. Spread on a towel and pat dry to prevent sogginess.

Heat a wok or large skillet with 1 tbsp oil over medium-high. Add cauliflower rice and stir-fry until dry and lightly browned, 8–10 minutes.

Push cauliflower to the side. Add remaining oil and sauté garlic 30–45 seconds.

Add five-spice powder, soy sauce, and rice vinegar (optional). Stir well.

Make a well: crack eggs into the center and scramble quickly, then mix through.

Fold in spinach (optional) until just wilted.
