Ingredients

  • 8 large Eggs
  • 1 cup Spinach(optional)
  • 6 cups Cauliflower rice
  • 3 stalks Green onions (chopped)(optional)
  • 2 cloves Garlic (minced)
  • 2 tbsp Neutral oil(optional)
  • 2 tbsp Soy sauce (low-sodium)
  • 1 tbsp Rice vinegar(optional)
  • 1 tsp Five-spice powder
  • 1/4 tsp White pepper(optional)
  • 1/4 tsp Salt(optional)

Instructions

  1. 1

If using frozen cauliflower rice, thaw and squeeze dry. Spread on a towel and pat dry to prevent sogginess.

  2. 2

Heat a wok or large skillet with 1 tbsp oil over medium-high. Add cauliflower rice and stir-fry until dry and lightly browned, 8–10 minutes.

  3. 3

Push cauliflower to the side. Add remaining oil and sauté garlic 30–45 seconds.

  4. 4

Add five-spice powder, soy sauce, and rice vinegar (optional). Stir well.

  5. 5

Make a well: crack eggs into the center and scramble quickly, then mix through.

  6. 6

Fold in spinach (optional) until just wilted.

  7. 7

Finish with green onions and white pepper. Serve hot as snack bites.
