Ingredients

  • 2 cups Cooked jasmine rice (day-old preferred)
  • 2 large Eggs
  • 1/2 cup Frozen peas
  • 3 stalks Scallions
  • 2 tbsp Soy sauce
  • 1 tbsp Neutral oil (e.g., canola or vegetable)
  • 1 clove Garlic(optional)
  • 1/4 tsp Ground white pepper or black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Finely chop the scallions (separate whites and greens). If using garlic, mince it. Break up the cooked rice so grains are separate.

  2. 2

Cook (15 minutes): Heat oil in a large skillet or wok over medium-high heat. Add scallion whites (and garlic, if using) and stir-fry 30–60 seconds until fragrant.

  3. 3

Cook the eggs: Push rice mixture to one side of the pan. Add eggs to the empty side and scramble until just set, then fold into the rice.

  4. 4

Finish: Add peas and stir-fry 3–4 minutes until hot. Add soy sauce and pepper, then toss until evenly coated and the rice is heated through (about 5–7 minutes total).

  5. 5

Serve: Turn off heat, fold in scallion greens, and serve immediately.
