Ingredients

  • 2 cups Cooked jasmine rice (day-old preferred)
  • 2 large Eggs
  • 3 tbsp Soy sauce
  • 1 tbsp Neutral oil (canola/vegetable)
  • 1 cup Mixed vegetables (peas, carrots, corn)
  • 2 stalks Scallions
  • 1 clove Garlic(optional)
  • 0.25 tsp Ground black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Finely chop the scallions (separate whites and greens). If using garlic, mince it. Measure the soy sauce and mixed vegetables.

  2. 2

Cook (12 minutes): Heat a large skillet or wok over medium-high heat and add the oil. Scramble the eggs quickly, then transfer to a plate.

  3. 3

Cook the vegetables in the same pan for about 4–5 minutes until hot and lightly tender. Add garlic (if using) and stir for 30 seconds.

  4. 4

Add the cooked rice to the pan and break up any clumps. Stir-fry for about 5–6 minutes until the rice is heated through and slightly dry.

  5. 5

Season with soy sauce and black pepper (if using). Return the eggs to the pan, toss to combine, and cook 1 minute. Stir in scallion greens and serve.
