Ingredients

  • 3 cups cooked white rice (day-old preferred)
  • 8 oz boneless skinless chicken breast, diced
  • 2 large eggs, beaten
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 green onions, sliced(optional)
  • to taste salt and white pepper(optional)

Instructions

  1. 1

Dice the chicken into 1/2-inch pieces and beat the eggs in a small bowl (about 10 minutes prep).

  2. 2

Heat 1 tbsp vegetable oil in a large wok or skillet over medium-high heat. Add chicken and stir-fry 5-6 minutes until cooked through and lightly golden. Remove and set aside.

  3. 3

Add remaining oil to the wok. Pour in beaten eggs and scramble for about 1 minute until just set, then push to one side.

  4. 4

Add garlic and frozen vegetables; stir-fry 2-3 minutes until vegetables are heated through.

  5. 5

Add rice, breaking up clumps, and stir-fry 3-4 minutes until heated through and slightly crispy.

  6. 6

Return chicken to the wok, add soy sauce and sesame oil, and toss everything together for 1-2 minutes. Season with salt and white pepper.

  7. 7

Remove from heat, top with sliced green onions, and serve hot.
