Ingredients

  • 12 ounces Lo Mein noodles or spaghetti
  • 3 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Brown sugar
  • 1 teaspoon Fresh ginger, grated
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 1 cup Carrots, julienned
  • 1 cup Snow peas
  • 2 cups Baby spinach
  • 2 stalks Green onions, sliced(optional)

Instructions

    Boil a large pot of water and cook the noodles according to package directions, then drain.

    In a small bowl, whisk together the soy sauce, sesame oil, brown sugar, ginger, and garlic to create the sauce.

    Heat the olive oil in a large wok or skillet over medium-high heat.

    Add the carrots and snow peas to the skillet and stir-fry for 3-4 minutes until tender-crisp.

    Add the baby spinach to the skillet and cook for 1 minute until just wilted.

    Add the cooked noodles and the prepared sauce to the vegetables.

    Toss everything together for 2 minutes until the noodles are evenly coated and heated through.

    Garnish with sliced green onions and serve immediately.
