Ingredients

  • 6 pieces Lamb chops, bone‑in
  • 2 tablespoons Olive oil
  • 3 tablespoons Low‑sodium soy sauce
  • 1 teaspoon Ground star anise
  • 1 teaspoon Ground cinnamon
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh ginger, grated
  • 1/2 teaspoon Black pepper

Instructions

  1. 1

In a small bowl combine soy sauce, olive oil, ground star anise, ground cinnamon, minced garlic, grated ginger, and black pepper to form a thick rub.

  2. 2

Pat the lamb chops dry, then rub the spice mixture evenly over both sides of each chop. Let them rest at room temperature for 10 minutes while you preheat the oven to 190 °C (375 °F).

  3. 3

Heat a heavy skillet over medium‑high heat. Add the lamb chops and sear for 2‑3 minutes per side until a deep brown crust forms.

  4. 4

Transfer the skillet to the preheated oven and roast for 12‑15 minutes, or until the internal temperature reaches 60 °C (140 °F) for medium‑rare.

  5. 5

Remove the chops, let them rest 5 minutes, then slice against the grain and serve.
