Ingredients
- 4 cups Whole milk
- 1 cup Heavy cream
- 0.5 cup Condensed milk
- 2 tablespoons Sugar
- 8 pieces Green cardamom pods, crushed
- 0.5 cup Shelled pistachios, finely chopped
- 1 pinch Saffron strands(optional)
- 1 teaspoon Cornstarch
- 0.5 teaspoon Rose water(optional)

In a large heavy-bottomed pan, combine the whole milk and heavy cream and bring to a gentle boil over medium heat.

Reduce the heat to low and simmer the milk mixture, stirring frequently to prevent burning, until it reduces by half its original volume.

Whisk in the condensed milk, sugar, and saffron strands, continuing to cook for another 10 minutes.

Dissolve the cornstarch in a tablespoon of cold milk and stir it into the pan to slightly thicken the mixture.

Remove from heat and stir in the crushed cardamom powder, rose water, and half of the chopped pistachios.

Allow the mixture to cool completely to room temperature before pouring into kulfi molds or popsicle sticks.

Sprinkle the remaining pistachios into the molds and insert popsicle sticks once the mixture is semi-set (about 2 hours in).

Freeze for at least 8 hours or overnight until completely firm before serving.
