Ingredients

  • 180 g Pasta (spaghetti or penne)
  • 250 g Cherry tomatoes
  • 150 g Fresh mozzarella
  • 10 g Fresh basil
  • 2 tbsp Balsamic vinegar
  • 1 tbsp Olive oil
  • 1 clove Garlic (minced)(optional)
  • 0.5 tsp Salt(optional)
  • 0.25 tsp Black pepper(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil and cook the pasta until al dente (about 10–12 minutes). Reserve 1/4 cup pasta water, then drain.

  2. 2

While the pasta cooks, halve the cherry tomatoes and tear the mozzarella into bite-size pieces. Finely chop the basil.

  3. 3

In a bowl, combine tomatoes, mozzarella, basil, olive oil, balsamic vinegar, and (if using) minced garlic. Season with salt and black pepper.

  4. 4

Add the hot drained pasta to the bowl and toss well. If needed, loosen with a splash of reserved pasta water to lightly coat the pasta. Serve immediately.
