Ingredients

  • 3 cups day-old crusty bread, torn into 1-inch pieces
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella, torn into bite-sized pieces
  • 1/2 cup fresh basil leaves, torn
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup red onion, thinly sliced(optional)

Instructions

  1. 1

Preheat oven to 400°F (200°C). Toss bread pieces with 1 tbsp olive oil and a pinch of salt, then spread on a baking sheet.

  2. 2

Bake bread for 8-10 minutes until golden and crisp, stirring halfway through. Remove and let cool slightly.

  3. 3

Meanwhile, whisk together remaining olive oil, balsamic vinegar, garlic, salt, and pepper in a large bowl.

  4. 4

Add tomatoes, mozzarella, basil, and red onion (if using) to the bowl and toss gently to combine.

  5. 5

Add the toasted bread and toss again. Let sit 5 minutes so the bread absorbs the dressing, then season to taste and serve.
