Ingredients

  • 2 pieces boneless, skinless chicken breast
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil
  • 1 medium tomatoes
  • 6 oz fresh mozzarella
  • 0.25 cup fresh basil
  • 0.25 cup balsamic vinegar
  • 1 tsp honey(optional)
  • 1 clove garlic(optional)

Instructions

  1. 1

Prep (15 minutes): Slice the tomatoes and mozzarella. Pat the chicken dry, then season both sides with salt and pepper. Mince the garlic (if using) and chop basil.

  2. 2

Cook chicken (about 10 minutes): Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook 5–6 minutes per side until cooked through (165°F/74°C). Transfer to a plate.

  3. 3

Make balsamic glaze (about 5–7 minutes): In the same skillet, reduce heat to medium. Add balsamic vinegar (and honey and garlic, if using). Simmer until slightly thickened and syrupy, about 2–4 minutes.

  4. 4

Assemble (about 3 minutes): Reduce heat to low. Top chicken with tomato slices and mozzarella. Cover the skillet for 1–2 minutes to melt the cheese. Drizzle with balsamic glaze and finish with basil.
