Ingredients

  • 12 oz boneless, skinless chicken breast
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1.5 tbsp olive oil
  • 12 oz cherry tomatoes
  • 2 cloves garlic
  • 1 tbsp balsamic vinegar(optional)
  • 0.5 tsp dried oregano(optional)
  • 8 oz fresh mozzarella
  • 0.5 cup fresh basil

Instructions

  1. 1

Prep (about 8 minutes): Pat chicken dry and slice into cutlets or thin pieces. Season with salt and black pepper. Halve cherry tomatoes; mince garlic; tear basil; slice mozzarella.

  2. 2

Sear (about 8 minutes): Heat olive oil in a skillet over medium-high heat. Add chicken in a single layer and cook 3–4 minutes per side until browned and mostly cooked through.

  3. 3

Simmer (about 8 minutes): Reduce heat to medium. Add tomatoes and garlic to the skillet. Stir in balsamic (and oregano if using). Simmer 6–8 minutes, until tomatoes soften and chicken reaches 165°F/74°C.

  4. 4

Layer and finish (about 4 minutes): Turn heat to low. Add mozzarella over the chicken and tomatoes. Cover and cook 2–3 minutes until mozzarella melts. Top with basil and serve immediately.
