Ingredients

  • 450 g ground chicken
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 1 egg
  • 2 cloves garlic (minced)
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup crushed tomatoes
  • 1 tbsp tomato paste
  • 1/4 cup fresh basil (chopped)
  • 1/2 cup mozzarella (shredded)

Instructions

  1. 1

Prep (15 minutes): In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, half the minced garlic, oregano, salt, and black pepper until just combined.

  2. 2

Form meatballs (about 15 minutes total prep included): Shape into small meatballs (about 12–14).

  3. 3

Cook meatballs and sauce (25 minutes): Heat olive oil in a skillet over medium heat. Add meatballs and cook, turning, until browned on the outside, about 8–10 minutes.

  4. 4

Simmer: Stir in the remaining garlic, crushed tomatoes, and tomato paste. Bring to a gentle simmer, cover, and cook until the meatballs are cooked through, about 12–15 minutes.

  5. 5

Finish: Stir in basil and sprinkle mozzarella over the meatballs. Cover for 1–2 minutes until mozzarella melts, then serve.
