Ingredients
- 1.5 lbs Fresh calamari rings and tentacles
- 0.25 cup Extra virgin olive oil
- 2 tbsp Fresh lemon juice
- 1 tbsp Fresh lime juice
- 0.5 cup Red bell pepper, finely diced
- 0.5 cup Yellow bell pepper, finely diced
- 0.25 cup Red onion, thinly sliced
- 2 tbsp Fresh parsley, chopped
- 2 cloves Garlic, minced
- 1 tsp Honey(optional)
- 1 pinch Salt and black pepper
- 1 tbsp Capers, drained(optional)

Bring a large pot of salted water to a rolling boil.

Prepare an ice bath in a medium bowl to stop the cooking process later.

In a small jar or bowl, whisk together the olive oil, lemon juice, lime juice, minced garlic, honey, salt, and pepper to create the vinaigrette.

Drop the calamari rings and tentacles into the boiling water and cook for only 60 to 90 seconds until opaque and firm.

Immediately drain the calamari and plunge it into the ice bath for 2 minutes, then drain again and pat thoroughly dry.

In a large mixing bowl, combine the chilled calamari, diced bell peppers, red onion, capers, and parsley.
