Ingredients

  • 8 units Large eggs
  • 4 units Pão Francês (Brazilian French rolls)
  • 3 tablespoons Unsalted butter
  • 0.25 cup Whole milk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 slices Queijo Minas or Mozzarella slices(optional)
  • 4 slices Presunto (Ham) slices(optional)
  • 1 unit Papaya (sliced)
  • 4 cups Strong Brazilian coffee

Instructions

  1. 1

Slice the Pão Francês rolls in half and spread a thin layer of butter on the cut sides.

  2. 2

Toast the rolls in a skillet or oven until the edges are golden brown and crispy.

  3. 3

In a medium bowl, whisk the eggs, milk, salt, and pepper until well combined and slightly frothy.

  4. 4

Melt the remaining butter in a non-stick skillet over medium-low heat.

  5. 5

Pour the egg mixture into the skillet and let it sit for 30 seconds until the edges begin to set.

  6. 6

Gently push the eggs toward the center with a spatula, creating large, soft curds until mostly cooked but still moist.

  7. 7

Remove the eggs from heat immediately to prevent overcooking.

  8. 8

Serve the eggs alongside the warm bread, ham, cheese, and fresh papaya with a hot cup of coffee.
