Ingredients

  • 180 g Pasta (penne or spaghetti)
  • 400 g Canned crushed tomatoes
  • 2 cloves Garlic
  • 1 tbsp Olive oil
  • 1 tsp Italian seasoning (or dried oregano + basil)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 120 ml Heavy cream (or unsweetened dairy-free cream)
  • 30 g Parmesan cheese, finely grated(optional)
  • 5 g Fresh basil (optional)(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil. Cook the pasta according to package directions until al dente, then reserve about 1/2 cup (120 ml) of pasta water and drain.

  2. 2

While the pasta cooks, mince the garlic. In a saucepan, heat the olive oil over medium heat and sauté the garlic for about 30–60 seconds until fragrant.

  3. 3

Add the crushed tomatoes, Italian seasoning, salt, and black pepper. Simmer for 15–18 minutes, stirring occasionally, until slightly thickened.

  4. 4

Stir in the cream and parmesan (if using). Simmer 2–3 minutes, then loosen the sauce with a splash of reserved pasta water as needed.

  5. 5

Add the drained pasta to the sauce and toss to coat. Cook for 1 minute to meld flavors, then serve (top with basil if using).
