Ingredients

  • 180 g Pasta (spaghetti or linguine)
  • 60 g Unsalted butter
  • 10 g Fresh sage leaves
  • 40 g Parmesan cheese, finely grated
  • 1 small Lemon
  • 1 tsp Kosher salt
  • 0.5 tsp Black pepper

Instructions

  1. 1

Bring a pot of salted water to a boil. Cook the pasta until al dente, then reserve about 1/2 cup (120 ml) of pasta water and drain.

  2. 2

While the pasta cooks, melt the butter in a skillet over medium heat. Continue cooking until it turns golden brown and smells nutty. Add the sage and cook for about 30–60 seconds until fragrant and crisp at the edges.

  3. 3

Add the drained pasta to the skillet and toss to coat. Add a splash of reserved pasta water as needed to make the sauce glossy.

  4. 4

Turn off the heat. Stir in the Parmesan, then squeeze in lemon juice to taste. Season with black pepper and serve immediately.
