Ingredients

  • 1 cup dry Dried black beans
  • 3 cups Water
  • 1 tbsp Olive oil
  • 1 small Yellow onion
  • 3 cloves Garlic
  • 1 tsp Smoked paprika
  • 1/2 tsp Ground cumin
  • 1 leaf Bay leaf(optional)
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 cup Cooked white rice

Instructions

  1. 1

Prep (10 minutes): Rinse the black beans. Dice the onion and mince the garlic.

  2. 2

Cook beans (45 minutes): In a pot, heat olive oil over medium heat. Sauté onion for 4–5 minutes until softened, then add garlic and cook 30 seconds. Stir in smoked paprika, cumin, salt, pepper, and bay leaf (if using). Add rinsed beans and water, bring to a simmer, then reduce heat to maintain a gentle simmer.

  3. 3

Simmer until tender (about 35–40 minutes): Cook, stirring occasionally, until beans are tender and the liquid is slightly thickened. If needed, simmer a few extra minutes to reach a saucy consistency.

  4. 4

Serve: Spoon the feijoada-inspired beans over the cooked rice and serve hot.
