  • 3 cups Cauliflower rice
  • 1/2 cup Red bell pepper, diced
  • 3 stalks Scallions, thinly sliced
  • 1/4 cup Fresh cilantro leaves
  • 2 Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 1 tablespoon Lime juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1

Pulse cauliflower florets in a food processor until they resemble rice; set aside.

  2. 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat, add the cauliflower rice, and sauté for 4‑5 minutes until just tender; transfer to a bowl.

  3. 3

In the same skillet, add the remaining olive oil, then sauté the diced red pepper and scallions for 2‑3 minutes until crisp‑tender; combine with the cauliflower rice.

  4. 4

In a small bowl whisk together minced garlic, chopped cilantro, lime juice, salt, and black pepper; drizzle over the warm salad and toss to coat evenly.

  5. 5

Serve immediately or chill for up to 30 minutes; garnish with extra cilantro if desired.
