Ingredients

  • 200 g Rice noodles
  • 3 cup Mixed vegetables (e.g., bell pepper, carrots, broccoli, snap peas)
  • 3 tablespoon Soy sauce
  • 1 tablespoon Fresh ginger, grated
  • 2 cloves Garlic, minced
  • 1 tablespoon Sesame oil
  • 1 tablespoon Vegetable oil
  • 2 tablespoon Green onions, sliced(optional)
  • 1 teaspoon Sesame seeds(optional)

Instructions

  1. 1

Cook the rice noodles according to package directions (usually 3–5 minutes in boiling water), then drain and set aside.

  2. 2

While the noodles cook, heat vegetable oil in a large skillet or wok over medium-high heat; add garlic and ginger, sauté 30 seconds until fragrant.

  3. 3

Add the mixed vegetables and stir‑fry 4–5 minutes until crisp‑tender.

  4. 4

Stir in soy sauce and sesame oil, then toss the cooked noodles into the pan, mixing everything for another 2 minutes to heat through.

  5. 5

Remove from heat, garnish with sliced green onions and sesame seeds if using, and serve immediately.
