Ingredients

  • 1 lb Flank steak, thinly sliced
  • 6 Scallions, cut into 3-inch lengths
  • 1/2 cup Pickled carrots, julienned
  • 1/4 cup Soy sauce
  • 2 tbsp Rice vinegar
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 2 tbsp Avocado oil
  • 1 tbsp Erythritol sweetener
  • 1/2 tsp Black pepper
  • 12 Toothpicks

Instructions

  1. 1

In a bowl, whisk soy sauce, rice vinegar, garlic, ginger, and erythritol. Add sliced flank steak, toss to coat, and marinate 20 minutes.

  2. 2

Drain beef, reserving marinade. Lay slices flat, place 2-3 scallion pieces and a few pickled carrot strips on each, roll tightly, and secure with toothpicks.

  3. 3

Heat avocado oil in a large skillet over medium-high heat. Sear rolls 8-10 minutes, turning every 2 minutes, until browned on all sides and cooked through.

  4. 4

Pour reserved marinade into the skillet and simmer 3-4 minutes, turning rolls to glaze, until sauce reduces and coats the beef.

  5. 5

Remove toothpicks, slice rolls on the bias, and serve warm with pan sauce drizzled over top.
