Ingredients

  • 12 oz, thinly sliced against the grain beef sirloin steak
  • 2 tbsp, divided potato starch
  • 3 tbsp, divided avocado oil
  • 4 cups broccoli florets
  • 4 minced garlic cloves
  • 1 tbsp, grated fresh ginger
  • 3 tbsp coconut aminos
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1/2 tsp red chili flakes(optional)
  • 1 cup, uncooked white rice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 sliced green onions

Instructions

  1. 1

Cook the white rice according to package directions and keep covered.

  2. 2

Toss the sliced beef with 1 tablespoon potato starch, salt, and black pepper; let sit 10 minutes.

  3. 3

Whisk the coconut aminos, rice vinegar, honey, remaining potato starch, and 1/4 cup water in a small bowl.

  4. 4

Heat 2 tablespoons avocado oil in a large skillet or wok over high heat. Add the beef in a single layer and sear 1-2 minutes per side until browned. Remove to a plate.

  5. 5

Add the remaining avocado oil, then the broccoli, garlic, and ginger. Stir-fry 3 minutes, adding a splash of water to help the broccoli steam.

  6. 6

Return the beef to the pan, pour in the sauce, and add chili flakes if using. Toss 2 minutes until the sauce thickens and coats everything.

  7. 7

Serve the beef and broccoli over the steamed rice, topped with sliced green onions.
