Ingredients
- 200 g egg noodles (or chow mein noodles)
- 250 g lean beef (thinly sliced, flank or sirloin)
- 250 g broccoli florets
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tsp dark soy sauce (optional, for color)(optional)
- 1 tsp brown sugar (or honey)
- 2 cloves garlic (minced)
- 1 tsp ginger (minced)
- 1 tsp cornstarch
- 1 tbsp neutral oil (for stir-frying)
- 2 tbsp water (for sauce)
- 1 tsp sesame oil (optional, for finishing)(optional)
Instructions
- 1
Prep (about 15 minutes): Slice beef thinly. Cut broccoli into small florets. Mince garlic and ginger. If needed, cook noodles according to package directions, then drain and set aside.
- 2
Cook stir-fry (about 15 minutes): In a bowl, mix oyster sauce, soy sauce, brown sugar, water, and cornstarch until smooth. Heat a wok or large skillet over high heat with oil. Stir-fry beef until browned and just cooked through, then remove to a plate.
- 3
Stir-fry broccoli and aromatics: Add a little more oil if the pan is dry. Stir-fry garlic and ginger for 10–20 seconds, then add broccoli with 2–3 tbsp water. Cover and steam-stir until bright green and crisp-tender, about 3–5 minutes.
- 4
Combine and coat: Return beef to the pan. Add noodles and pour in the oyster-soy sauce. Toss and stir until the sauce turns glossy and evenly coats the noodles, about 1–2 minutes. Finish with sesame oil if using, then serve.
