Ingredients

  • 2 6 oz each Salmon fillets
  • 2 tablespoons Olive Oil
  • 1 cup Pomegranate Juice
  • 1/4 cup Honey
  • 1/4 cup Pistachios
  • 1 whole Lemon
  • 2 cloves Garlic
  • 1 teaspoon Salt(optional)
  • 1 teaspoon Black Pepper(optional)

Instructions

  1. 1

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. 2

In a small saucepan, combine pomegranate juice, honey, lemon juice, and minced garlic. Bring to a simmer over medium heat, stirring until the honey is fully incorporated. Reduce heat and simmer for 5-7 minutes until the glaze slightly thickens.

  3. 3

Pat the salmon fillets dry and brush with olive oil. Season generously with salt and pepper. Place the fillets on the prepared baking sheet.

  4. 4

Bake the salmon for 12-15 minutes, or until the internal temperature reaches 145°F (63°C) and the fish is flaky. During the last 5 minutes of cooking, brush the tops of the fillets generously with the pomegranate glaze.

  5. 5

Remove from the oven. Let rest for 5 minutes. Top each fillet with toasted pistachios and drizzle with any remaining glaze before serving.
