
Authentic Spanish Horchata De Chufa

Ingredients
- 250 grams Tiger nuts (Chufas)
- 1 liter Cold filtered water
- 125 grams Granulated sugar
- 1 piece Cinnamon stick
- 1 strip Lemon zest(optional)
- 500 ml Soaking water
- 1 cup Ice cubes(optional)
- 1 pinch Ground cinnamon(optional)

Rinse the tiger nuts thoroughly under cold running water to remove any dirt or debris.

Place the tiger nuts in a large bowl, cover with 500ml of water, and soak for 24 hours at room temperature, changing the water once halfway through.

Drain and rinse the soaked tiger nuts one final time.

Place the soaked nuts into a high-speed blender with 500ml of the fresh filtered water and the lemon zest.

Blend on high speed for 2-3 minutes until the mixture looks like a thick, milky paste.

Add the remaining 500ml of water and the sugar, then blend for another 30 seconds to incorporate.

Strain the mixture through a very fine mesh sieve or a nut milk bag into a pitcher, squeezing tightly to extract all the liquid.

Add the cinnamon stick to the pitcher and refrigerate for at least 2 hours until ice-cold before serving.
