Ingredients
- 3 large Russet potatoes
- 0.5 cup Olive oil
- 0.5 small Onion
- 2 pieces Garlic cloves
- 2 tsp Smoked paprika (Pimentón)
- 0.25 tsp Cayenne pepper(optional)
- 1 tbsp Tomato paste
- 0.5 cup Vegetable broth
- 0.25 cup Mayonnaise

Peel the potatoes and cut them into 1-inch cubes. Pat them dry thoroughly.

Heat olive oil in a large skillet over medium-high heat. Fry the potatoes until golden and crispy on all sides, about 15-20 minutes. Remove and drain on paper towels.

In a separate small saucepan, sauté minced onion and 1 clove of garlic in a tablespoon of oil until soft.

Stir in the smoked paprika, cayenne, and tomato paste. Cook for 1 minute.

Slowly whisk in the vegetable broth and simmer until the sauce thickens. Blend until smooth if desired.

For the aioli, mix mayonnaise with one crushed garlic clove and a pinch of salt.

Serve the crispy potatoes hot, drizzled with the spicy brava sauce and the garlic aioli.
