Ingredients

Servings:4
  • 500 grams Paneer (Indian Cottage Cheese), cubed
  • 1 cup Thick Greek Yogurt
  • 1 tablespoon Ginger-Garlic Paste
  • 2 tablespoons Mango Pickle Masala (Achar Masala)
  • 1 teaspoon Kashmiri Red Chili Powder
  • 2 tablespoons Dry Roasted Gram Flour (Besan)
  • 2 tablespoons Mustard Oil
  • 1 teaspoon Dried Fenugreek Leaves (Kasuri Methi)
  • 2 cups Bell Peppers and Onions, cubed
  • 1 tablespoon Lemon Juice
  • 1/2 teaspoon Salt

Instructions

  1. 1

In a large mixing bowl, whisk the thick yogurt until smooth.

  2. 2

Add the ginger-garlic paste, mango pickle masala, red chili powder, roasted gram flour, salt, and lemon juice to the yogurt.

  3. 3

Heat the mustard oil until it reaches smoking point, let it cool slightly, then whisk it into the marinade for an authentic smoky flavor.

  4. 4

Gently fold in the paneer cubes, bell peppers, and onions until every piece is thoroughly coated in the marinade.

  5. 5

Cover the bowl and let it marinate in the refrigerator for at least 30 to 60 minutes.

  6. 6

Thread the marinated paneer and vegetables onto skewers, alternating between cheese and veggies.

  7. 7

Preheat your oven or grill to 400°F (200°C) and cook the skewers for 12-15 minutes, turning halfway through.

  8. 8

Finish by broiling for 2 minutes or using a kitchen torch to get charred edges, then serve hot with mint chutney.
