Ingredients

  • 2 medium zucchini, grated
  • 1 tsp salt
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 3 green onions, sliced
  • 2 tbsp fresh dill, chopped
  • 1/4 tsp black pepper
  • 3 tbsp olive oil, for frying
  • 3/4 cup Greek yogurt
  • 1/2 cup cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp lemon juice

Instructions

  1. 1

Grate the zucchini, toss with 1/2 tsp salt, and let sit 10 minutes. Squeeze out excess moisture with a clean towel.

  2. 2

Meanwhile, make the tzatziki: mix Greek yogurt, grated cucumber, garlic, lemon juice, and a pinch of salt in a small bowl. Refrigerate.

  3. 3

In a bowl, whisk eggs, then stir in zucchini, flour, green onions, dill, pepper, and remaining salt until a thick batter forms.

  4. 4

Heat olive oil in a large skillet over medium heat. Drop 1/4-cup portions of batter into the pan and flatten slightly.

  5. 5

Fry 3-4 minutes per side until golden brown and crisp, working in batches. Drain on paper towels.

  6. 6

Serve fritters warm with chilled tzatziki for dipping.
