Ingredients

  • 2 fillets salmon fillets
  • 1 medium lemon
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter(optional)
  • 2 tbsp fresh parsley(optional)
  • 1 tsp dried oregano(optional)
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Instructions

  1. 1

Prep (about 10 minutes): Pat salmon dry. Zest and juice the lemon. Mince the garlic and chop the parsley (if using). Season salmon with salt, pepper, and oregano.

  2. 2

Cook (about 15 minutes): Heat olive oil in a skillet over medium-high heat. Add salmon skin-side down (if skin-on) and cook 4–5 minutes until browned. Flip and cook 3–5 minutes more until just cooked through.

  3. 3

Finish: Reduce heat to low. Add butter (if using) and garlic to the skillet for 30–60 seconds until fragrant. Stir in lemon zest and lemon juice, then spoon the pan sauce over the salmon.

  4. 4

Serve: Top with parsley (if using) and serve immediately with any pan juices.
