Ingredients

  • 1 baguette or crusty roll
  • 2 eggs
  • 1/2 cup cooked pork (shredded or sliced)
  • 1 tbsp mayonnaise
  • 1 tbsp soy sauce
  • 1 clove garlic (minced)(optional)
  • 1.5 tbsp pickling vinegar (or rice vinegar)
  • 1 tsp sugar
  • 1/4 cup carrot (shredded)
  • 1/4 cup daikon or cucumber (thinly sliced)
  • 1 tbsp cilantro or parsley(optional)
  • 1 tsp neutral oil(optional)
  • 1/4 tsp black pepper(optional)

Instructions

  1. 1

Quick-pickle the veggies: mix vinegar and sugar in a bowl until dissolved. Add carrot and daikon/cucumber; toss and set aside 5 minutes.

  2. 2

Warm the pork in a skillet with soy sauce and garlic (if using) until hot, 2–3 minutes.

  3. 3

Cook eggs to your preference: for a classic breakfast sandwich, fry or scramble until just set (or keep yolks runny).

  4. 4

Slice the roll and spread mayonnaise on both sides.

  5. 5

Fill with warm pork, eggs, pickled vegetables, and herbs. Add black pepper to taste.
