Ingredients

  • 4 slices crusty bread (ciabatta or sourdough)
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh rosemary, chopped
  • 1 tbsp lemon juice(optional)
  • 1/4 tsp salt
  • 1/2 tsp black pepper, freshly cracked

Instructions

  1. 1

Preheat the oven to 400°F (200°C). Place the bread slices on a baking sheet and toast for 5 minutes until crisp and golden.

  2. 2

While the bread toasts, heat 2 tbsp olive oil in a skillet over medium heat. Add the minced garlic and rosemary and cook for 1 minute until fragrant.

  3. 3

Add the cannellini beans, salt, and half the black pepper. Cook for 3-4 minutes, mashing lightly, until warmed through and slightly creamy.

  4. 4

Stir in lemon juice if using. Spoon the herbed beans over the toasted bread slices.

  5. 5

Drizzle with remaining olive oil, sprinkle with remaining black pepper, and serve immediately.
