Ingredients

  • 1.5 cups Cannellini beans, drained and rinsed
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 cup Cherry tomatoes, halved
  • 3 cups Fresh spinach
  • 1 tsp Fresh rosemary, chopped
  • 0.25 cup Vegetable broth
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Grated Parmesan(optional)

Instructions

  1. 1

Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped rosemary; sauté for 1-2 minutes until fragrant.

  2. 2

Add cherry tomatoes and cook for 3-4 minutes, stirring occasionally, until they begin to soften and release their juices.

  3. 3

Stir in cannellini beans and vegetable broth. Simmer for 5 minutes, gently mashing some beans with a spoon to create a creamy texture.

  4. 4

Add spinach in handfuls, stirring until wilted, about 2 minutes. Season with salt and black pepper.

  5. 5

Remove from heat, top with grated Parmesan if using, and serve warm.
