  • 2 cups Tapioca flour (polvilho doce)
  • 1/2 cup Whole milk
  • 1/4 cup Vegetable oil
  • 2 units Large eggs
  • 1/2 cup Grated Parmesan cheese
  • 1 cup Grated Minas cheese (or Monterey Jack)
  • 1 teaspoon Salt
  • 8 slices Smoked ham slices
  • 1 half Fresh papaya
  • 1/2 cup Requeijão (Brazilian cream cheese)(optional)

    Preheat your oven to 375°F (190°C) and grease a baking sheet or mini-muffin tin.

    In a small saucepan, combine the milk, oil, and salt, and bring to a boil over medium heat.

    Place the tapioca flour in a large bowl and carefully pour the boiling milk mixture over it, stirring constantly with a wooden spoon until a dough forms.

    Allow the dough to cool for 5 minutes, then mix in the eggs one at a time until fully incorporated.

    Fold in the grated Parmesan and Minas cheese until the dough is smooth and slightly sticky.
