Ingredients

  • 2 cups white rice
  • 4 count eggs
  • 2 tbsp avocado oil
  • 1 tsp garlic powder
  • 1/2 cup mini peppers
  • 1/4 cup red onion
  • 2 tbsp coconut aminos
  • 1 count fresh red chilies(optional)
  • 1/4 cup fresh basil(optional)
  • 1 count lime(optional)

Instructions

  1. 1

Cook the white rice ahead of time and let it cool completely (day-old rice works best).

  2. 2

Beat the eggs with a pinch of salt.

  3. 3

Heat 1 tbsp avocado oil in a wok or large skillet over medium-high heat and scramble the eggs until just set; remove and set aside.

  4. 4

Add remaining oil, then stir-fry diced mini peppers, red onion, and sliced red chili for 2 minutes.

  5. 5

Add the cold rice, breaking up clumps, and stir-fry 4 minutes until heated through and slightly crisp.

  6. 6

Stir in coconut aminos, garlic powder, and return the eggs; toss to combine.

  7. 7

Finish with torn fresh basil and a squeeze of lime.
