Ingredients

  • 300 g boneless skinless chicken breast
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • 2 cloves garlic
  • 1 tsp ground ginger
  • 1/3 cup peanut butter (creamy)
  • 1/4 cup coconut milk (light or regular)
  • 2 tbsp water
  • 1 tsp fish sauce (or extra soy sauce)(optional)
  • 1 tsp sriracha or chili paste(optional)
  • 1 tsp vegetable oil
  • 6 pcs skewers (wood, soaked if grilling)(optional)

Instructions

  1. 1

Prep (15 minutes): Cut chicken into 1-inch cubes. In a bowl, mix soy sauce, lime juice, brown sugar, minced garlic, and ground ginger. Toss chicken in the marinade, then thread onto skewers (if using wood skewers, soak them first).

  2. 2

Cook (15 minutes): Heat a grill or a skillet over medium-high heat. Lightly oil the grates or pan. Cook skewers 6–8 minutes total, turning occasionally, until chicken is cooked through (no longer pink).

  3. 3

Make sauce during cooking (about 5–7 minutes total): In a small bowl, whisk peanut butter, coconut milk, water, fish sauce (if using), and chili paste (if using) until smooth and creamy. If too thick, add a splash more water.

  4. 4

Serve: Plate skewers and spoon sauce on the side or drizzle over the top. Serve immediately.
