Ingredients

  • 200 g rice noodles
  • 120 g natural peanut butter
  • 2 tbsp soy sauce (or tamari)
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 2 cloves garlic
  • 1 tbsp fresh ginger
  • 1 tsp sesame oil
  • 120 ml water
  • 1 cup shredded carrots
  • 1 cup bell pepper, thinly sliced
  • 2 tbsp green onions, sliced
  • 0.5 tsp chili flakes (optional)(optional)
  • 2 tbsp cilantro (optional)(optional)

Instructions

  1. 1

Bring a large pot of water to a boil. Cook the rice noodles according to package directions until tender, about 12 minutes; drain and set aside.

  2. 2

While noodles cook, whisk peanut butter, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, sesame oil, and water until smooth and creamy. If needed, add a splash more water to loosen the sauce.

  3. 3

In a large bowl, toss hot noodles with the peanut sauce until evenly coated.

  4. 4

Quickly toss in the carrots and bell pepper (they will soften slightly from the heat). Taste and adjust with more lime juice or soy sauce if desired.

  5. 5

Serve topped with green onions and optional cilantro and chili flakes.
