Ingredients

  • 1 cup cup glutinous (sticky) rice
  • 1 cup cup coconut milk
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 large ripe mango
  • 1/4 cup extra coconut milk for drizzling
  • 1 tablespoon toasted sesame seeds (optional garnish)(optional)

Instructions

  1. 1

Rinse the sticky rice until water runs clear, then soak in water for 20 minutes.

  2. 2

Drain the rice and place it in a steamer basket; steam over boiling water for 20‑25 minutes until tender.

  3. 3

While the rice steams, combine 1 cup coconut milk, sugar, and salt in a saucepan; heat gently until sugar dissolves, then remove from heat.

  4. 4

When rice is done, transfer to a bowl and pour the sweetened coconut milk over it, stirring to coat; let sit 5 minutes to absorb.

  5. 5

Peel and slice the mango into thin wedges.

  6. 6

Serve the coconut‑infused sticky rice on plates, top with mango slices, and drizzle with the remaining coconut milk; sprinkle toasted sesame seeds if desired.
