Ingredients

  • 1 cup glutinous (sticky) rice
  • 1 cup coconut milk
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 ripe mango
  • 1/4 cup extra coconut milk for drizzling
  • 1 tablespoon toasted sesame seeds (optional garnish)(optional)

Instructions

  1. 1

Rinse the sticky rice under cold water until the water runs clear, then soak it in water for 30 minutes (you can skip soaking if short on time).

  2. 2

Drain the rice and place it in a steamer basket; steam over boiling water for 15‑20 minutes until tender.

  3. 3

While the rice steams, combine 1 cup coconut milk, sugar, and salt in a small saucepan; heat gently until the sugar dissolves, then remove from heat.

  4. 4

When the rice is done, transfer it to a bowl and pour 3/4 of the sweetened coconut milk over it, stirring to coat; let it sit for 5 minutes to absorb.

  5. 5

Peel and slice the mango into thin wedges or cubes and arrange on plates beside the sticky rice.

  6. 6

Drizzle the remaining coconut milk over the mango and rice, and sprinkle toasted sesame seeds if using.
