Ingredients

  • 1/2 cup Jasmine rice (uncooked)
  • 3/4 cup Water
  • 1/2 cup Coconut milk (unsweetened or regular)
  • 2 tbsp Brown sugar
  • 1/8 tsp Salt
  • 1 cup Mango (ripe), sliced
  • 1 tbsp Lime juice(optional)
  • 1 tsp Toasted sesame seeds(optional)

Instructions

  1. 1

Cook the jasmine rice: Rinse the rice, then add it to a pot with water. Bring to a boil, cover, reduce to low, and simmer until tender and the water is absorbed (about 15–20 minutes).

  2. 2

Make the coconut-sweet sauce: In a small saucepan, warm coconut milk with brown sugar and salt over low heat until the sugar dissolves (about 3–5 minutes).

  3. 3

Combine: When the rice is cooked, fluff it and stir in the coconut-sweet sauce. Let it sit covered for 2–3 minutes to thicken slightly.

  4. 4

Serve: Spoon warm sticky rice into bowls, top with mango slices, and drizzle any remaining coconut sauce from the pan. Finish with lime juice and sesame seeds if using.
