Ingredients

  • 200 g spaghetti
  • 1/2 cup unsweetened oat milk
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp sriracha
  • 1 clove garlic
  • 1 tbsp vegetable oil
  • 2 stalks green onions(optional)
  • 1 tbsp crushed peanuts(optional)

Instructions

  1. 1

Cook the spaghetti according to package directions until al dente, then drain and set aside, reserving 1/4 cup pasta water.

While the pasta cooks, whisk together oat milk, peanut butter, soy sauce, lime juice, sriracha, and minced garlic in a bowl until smooth.

  3. 3

Heat the vegetable oil in a large skillet over medium heat, add the sauce mixture and cook, stirring, for 2‑3 minutes until it thickens slightly.

Add the cooked spaghetti and reserved pasta water to the skillet, toss to coat the noodles evenly with the sauce, and cook for another 2 minutes.

  5. 5

Serve topped with optional sliced green onions and crushed peanuts.
