Ingredients

  • 10 large Eggs
  • 3 cups Spinach
  • 2 tbsp Thai green curry paste
  • 1/2 cup Coconut milk (full-fat)
  • 1 tbsp Fish sauce (or soy sauce)
  • 1 tbsp Lime juice(optional)
  • 1 tbsp Neutral oil
  • 1/8 tsp Salt(optional)

Instructions

  1. 1

Blanch spinach 45 seconds, squeeze dry, and chop finely.

  2. 2

In a bowl, whisk eggs until smooth. Stir in spinach.

  3. 3

In a small saucepan, warm coconut milk with green curry paste and fish sauce until fragrant, 2–3 minutes. Add lime juice if using.

  4. 4

Temper the eggs: slowly whisk the warm curry mixture into the egg-spinach mixture until fully combined.

  5. 5

Pour into a lined loaf pan or shallow tray and bake at 325°F (163°C) for 18–22 minutes until set like a soft custard.

  6. 6

Cool completely, then cut into 16 bite-size cubes.

  7. 7

Skewer 4 per person (or pan-sear without skewers). Sear in a hot skillet with a little oil until lightly charred on multiple sides.

  8. 8

    Serve hot as snack skewers.
