Ingredients

  • 2 cups Cooked jasmine rice (day-old preferred)
  • 2 large Eggs
  • 1 tbsp Vegetable oil
  • 2 cloves Garlic, minced
  • 1 cup Mixed vegetables (peas, carrots, corn)
  • 2 tbsp Soy sauce
  • 1 tsp Fish sauce(optional)
  • 1 tbsp Lime juice(optional)
  • 2 tbsp Green onions, sliced(optional)

Instructions

  1. 1

Prep (about 10 minutes): If using fresh rice, spread it out to cool. Mince the garlic, slice the green onions, and measure the soy sauce, fish sauce, and lime juice.

  2. 2

Cook (about 15 minutes): Heat a wok or large skillet over high heat with the vegetable oil. Add garlic and stir for 15–20 seconds until fragrant.

  3. 3

Add mixed vegetables and stir-fry 3–4 minutes until hot and lightly tender.

  4. 4

Push vegetables to one side. Crack in eggs and scramble quickly until just set, then mix with the vegetables.

  5. 5

Add the cooked rice and break up any clumps. Stir-fry 5–7 minutes until the rice is hot and slightly dry.

  6. 6

Season with soy sauce, fish sauce (if using), and lime juice (if using). Toss well and cook 30–60 seconds more. Serve immediately with green onions.
