Ingredients

  • 3 cups Cooked jasmine rice (day-old preferred)
  • 2 Eggs
  • 1/2 cup, sliced Onion
  • 1 cup, chopped Tomato
  • 2 tbsp Fish sauce
  • 1 tbsp Soy sauce
  • 2 tbsp Vegetable oil
  • 3 cloves, minced Garlic
  • 1 tsp Sugar
  • 2 tbsp, sliced Green onion(optional)
  • 2 Lime wedges(optional)
  • 2 tbsp, chopped Cilantro(optional)
  • 1 tsp Chili flakes(optional)

Instructions

  1. 1

Heat 1 tbsp oil in a wok or large skillet over medium-high heat. Add sliced onion and garlic, stir-frying for 1-2 minutes until fragrant.

  2. 2

Push the onion mixture to one side of the wok, add the remaining oil, and crack in the eggs. Scramble for about 1 minute until just set, then mix with the onions.

  3. 3

Add the chopped tomato and cooked rice, breaking up any clumps. Stir-fry for 3-4 minutes, tossing constantly so the rice fries evenly.

  4. 4

Season with fish sauce, soy sauce, and sugar. Toss well to coat and cook another 1-2 minutes.

  5. 5

Remove from heat, stir in green onion, and serve hot with lime wedges, cilantro, and chili flakes on the side.
