Ingredients
- 1 medium English cucumber
- 2 tbsp fresh lime juice
- 1 tbsp fish sauce(optional)
- 1 tbsp soy sauce (or tamari)(optional)
- 1 to 2 chili (fresh Thai chili or serrano), finely sliced
- 1 tsp granulated sugar
- 1 pinch kosher salt(optional)
Instructions
- 1
Wash the cucumber, then slice into thin half-moons. If you prefer less watery salad, lightly salt the slices and let sit 5 minutes, then pat dry.

- 3
Add cucumber to the bowl and toss until evenly coated. Taste and adjust with a tiny extra squeeze of lime, a pinch of sugar, or more chili if desired.
- 4
Serve immediately as a fast side.
