Ingredients

  • 12 oz flank steak
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh mint leaves
  • 3 tbsp lime juice
  • 2 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 red chili
  • 1 clove garlic
  • 1 tbsp vegetable oil

Instructions

  1. 1

Season the flank steak with salt and pepper and let it come to room temperature while you prep the salad (5 minutes).

  2. 2

Whisk together lime juice, fish sauce, brown sugar, minced garlic, and sliced chili in a small bowl to make the dressing.

  3. 3

Slice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and chop the cilantro and mint. Combine with greens in a large bowl.

  4. 4

Heat oil in a grill pan or skillet over high heat and cook the steak 3-4 minutes per side for medium-rare (about 8 minutes total).

  5. 5

Rest the steak 5 minutes, then slice thinly against the grain.

  6. 6

Toss the salad with half the dressing, top with warm beef slices, and drizzle with remaining dressing before serving.
