Ingredients

  • 0.75 cup sunflower seed butter
  • 0.75 cup unsweetened shredded coconut
  • 0.25 cup ground flaxseed
  • 2 tbsp coconut oil
  • 3 tbsp sugar-free maple syrup
  • 1 tsp vanilla extract
  • 2 oz dark chocolate (85%)
  • 0.25 cup toasted pumpkin seeds
  • 0.25 tsp sea salt
  • 0.5 tsp cinnamon

Instructions

  1. 1

Toast the shredded coconut in a dry skillet over medium heat, stirring constantly, for 3-4 minutes until golden and fragrant. Cool completely.

  2. 2

Melt the dark chocolate with 1 tbsp coconut oil over a double boiler, stirring until smooth. Set aside to cool slightly.

  3. 3

Stir together the sunflower seed butter, sugar-free maple syrup, vanilla, remaining melted coconut oil, cinnamon, and sea salt until smooth.

  4. 4

Fold in the toasted coconut, ground flaxseed, and toasted pumpkin seeds. Chill the mixture 15 minutes so it firms up and is scoopable.

  5. 5

Roughly chop the cooled chocolate and fold it in, reserving a few shards.

  6. 6

Roll into 12 bite-sized balls with your hands, pressing firmly so they hold together. Press a chocolate shard on top of each.

  7. 7

Chill 30 minutes until set. Store refrigerated up to 1 week.
