- 2 breasts boneless, skinless chicken breast
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/4 cup sun-dried tomatoes (packed in oil), drained
- 2 cloves garlic
- 1 tsp balsamic vinegar(optional)
- 1/2 cup cherry tomatoes(optional)
- 1/2 cup mozzarella cheese, shredded
- 2 tbsp fresh basil, chopped

Prep (about 12 minutes): Pat chicken dry and season both sides with salt and black pepper. Drain and chop sun-dried tomatoes; mince garlic; chop basil.

Cook (about 22 minutes): Heat olive oil in a skillet over medium-high heat. Add chicken and cook 5–6 minutes per side until browned and cooked through (internal temperature 165°F/74°C).

Add sun-dried tomatoes and garlic to the skillet and cook 1–2 minutes, stirring, until fragrant. If using, stir in balsamic vinegar and cherry tomatoes and cook 2 minutes to warm and slightly soften.

Reduce heat to low. Sprinkle mozzarella over the chicken and cover the skillet for 3–4 minutes until melted. Turn off heat and top with basil before serving.
