Ingredients

  • 180 g Rice noodles (medium)
  • 3 tbsp Natural peanut butter
  • 2 tbsp Lime juice
  • 1.5 tbsp Soy sauce
  • 1 tsp Brown sugar
  • 1 tbsp Sriracha (or chili paste)
  • 2 cloves Garlic
  • 1 tsp Fresh ginger (grated)(optional)
  • 2 tbsp Warm water
  • 1 small Cucumber
  • 2 stalks Green onions
  • 0.25 cup Fresh cilantro or Thai basil(optional)
  • 1 tsp Sesame oil(optional)

Instructions

  1. 1

Bring a pot of water to boil. Cook rice noodles according to package directions until tender, about 8–10 minutes; drain and rinse briefly under cool water to stop cooking.

  2. 2

While noodles cook, whisk peanut butter, lime juice, soy sauce, brown sugar, sriracha, minced garlic, and (if using) ginger with warm water until smooth and creamy. Stir in sesame oil (if using).

  3. 3

Toss drained noodles with the lime-chili peanut dressing until evenly coated, adding a splash of water if needed to loosen.

  4. 4

Slice cucumber thinly. Plate noodles and top with cucumber, sliced green onions, and cilantro/Thai basil (if using). Serve immediately.
